Char-Grill Chicken Ribbon Vegetables

Light, fast to prepare and a low-calorie dish of chicken breast, carrot and zucchini ribbons, with a roasted peanut vinaigrette.

  • M&J Char-Grilled Natural Thigh Fillet 720g
  • Zucchini green 240g
  • Carrots 160g
  • Butter 80g
  • Peanuts blanched 120g
  • Vegetable oil 80g
  • Vinaigrette oil lemon 200ml


  1. Sautee nuts off in the oil until they are lightly coloured
  2. Warm Char Grill Chicken on the grill
  3. Peel carrot and zucchini into ribbons, steam for two minutes
  4. Melt butter and toss carrot and zucchini through butter
  5. Place vegetables on the base of a bowl
  6. Chicken on top
  7. Sprinkle nuts over the dish
  8. Drizzle with dressing
