Char-Grill Chicken Ribbon Vegetables
Light, fast to prepare and a low-calorie dish of chicken breast, carrot and zucchini ribbons, with a roasted peanut vinaigrette.
Serves 4.
Ingredients:
- M&J Char-Grilled Natural Thigh Fillet 720g
- Zucchini green 240g
- Carrots 160g
- Butter 80g
- Peanuts blanched 120g
- Vegetable oil 80g
- Vinaigrette oil lemon 200ml
Method:
- Sautee nuts off in the oil until they are lightly coloured
- Warm Char Grill Chicken on the grill
- Peel carrot and zucchini into ribbons, steam for two minutes
- Melt butter and toss carrot and zucchini through butter
- Place vegetables on the base of a bowl
- Chicken on top
- Sprinkle nuts over the dish
- Drizzle with dressing
