Chicken and Avocado Sandwich

Decadent, yet filling, dish combining Chicken Breast Fillet, Hass avocado, baby spinach leaves and vine-ripened tomato on ciabatta with truffle vinaigrette.
Serves 4.

Ingredients:

  • Poached & Shredded Chicken Breast 320g
  • Ciabatta bread 8 Slice
  • Mayonnaise 160g
  • Baby spinach 40g
  • Roma tomato 160g
  • Vinaigrette truffle or any vinaigrette 60ml
  • Sea salt medium 12g
  • Kibbled black pepper 4g

Method:

  1. Decant Poached & Shredded Chicken Breast
  2. Slice avocado and tomato
  3. Toss spinach leaves in salt pepper and truffle vinaigrette
  4. Place spinach leaves on one slice of bread
  5. Top with avocado and tomato
  6. Add chicken
  7. Place remaining slice of bread on top and serve

 

Vinaigrette truffle

Ingredients:

  • Truffle oil 1.5ml
  • Balsamic vinegar 3ml
  • Cider vinegar 15ml
  • Pepper black ground 0.3g
  • Maldon sea salt 0.3g
  • Cottonseed oil 10.5g
