Chicken and Avocado Sandwich
Decadent, yet filling, dish combining Chicken Breast Fillet, Hass avocado, baby spinach leaves and vine-ripened tomato on ciabatta with truffle vinaigrette.
Serves 4.
Ingredients:
- Poached & Shredded Chicken Breast 320g
- Ciabatta bread 8 Slice
- Mayonnaise 160g
- Baby spinach 40g
- Roma tomato 160g
- Vinaigrette truffle or any vinaigrette 60ml
- Sea salt medium 12g
- Kibbled black pepper 4g
Method:
- Decant Poached & Shredded Chicken Breast
- Slice avocado and tomato
- Toss spinach leaves in salt pepper and truffle vinaigrette
- Place spinach leaves on one slice of bread
- Top with avocado and tomato
- Add chicken
- Place remaining slice of bread on top and serve
Vinaigrette truffle
Ingredients:
- Truffle oil 1.5ml
- Balsamic vinegar 3ml
- Cider vinegar 15ml
- Pepper black ground 0.3g
- Maldon sea salt 0.3g
- Cottonseed oil 10.5g
